Barley & Vegetable Soup March 2009
2 tbls oil 3 stalks celery chopped 1 lrg onion chopped 4 cups water 2 14 ½ oz cans beef broth ¼ cup pearl barley 1 28 oz can tomatoes diced in juice 2 small bay leaves 2 tsp garlic powder 1 ½ cup frozen peas ½ tsp hot pepper sauce 1 10 oz pkg frozen corn 2 cups frozen okra sliced
Heat oil in large pot over medium-high heat. Saute celery & onion until golden. Add 4 cups water, beef broth, barley, tomatoes with juices, corn, okra, bay leaves & garlic powder. Bring to boil, reduce heat & simmer uncovered until barley is tender, about 1 hour, adding additional water as needed. Add peas & hot pepper sauce to soup. Cook additional 5 minutes.
